Hello! Hello! Happy Monday.
We spent our weekend celebrating Matt’s birthday and it was lots of fun. I also got a couple of workouts in, cleaned, and did a bunch of cooking. It was a pretty good weekend.
Saturday morning I woke up early and did Day 6 of my yoga challenge. I have really noticed a difference in my body after six straight days of yoga. My hips and shoulders feel nice and open and it’s been the perfect way to balance all the strength training I have been doing lately.
Later that morning, I whipped up some GF banana-blueberry bread. I used this recipe, but I subbed coconut oil for the olive oil and I added a few tablespoons of almond butter, blueberries, and an extra banana. It turned out super moist and yummy!
Matt had a few clients to train so I took the girls to Kidzu which is a local children’s museum near our house.
The girls had fun running around, playing dress up, and swinging in the hammock chairs. Then things took a turn for the worse. Enter the dreaded double-meltdown. Why is it that children often have a meltdown in one of two situations: 1) a crowded, public place or 2) when you run into someone you know? Or in my case, both. I can usually diffuse the little tantrums here and there, but there was no stopping this. I may have left carrying one child over my shoulder and the other one on my side. Winning!
The day turned around because the girls napped for 3 hours and I was able to catch up on work and cook up some goodies.
I fried up some plantains in a few tablespoons of coconut oil and then sprinkled them with sea salt. I asked Matt to snap a pic for me because I was busy with something and this is the image he sent me! Hmmmm. Let me point out the bite mark in front.
I also made some spicy nuts by tossing some raw almonds in a little maple syrup, garlic powder, salt, sesame seeds, and chili sauce. I baked it for around 20 minutes at 350 degrees.
Saturday was a planned rest day, but I decided I needed to let off some steam so I did a quick run in the neighborhood. I ran 3 miles in 23:05 (7:43/ mi pace). Such a treat running in 50 degree weather. Not sure why my watch says Dec 24 – maybe something is up with my GPS.
That night we met a group of friends out at Kipos for dinner. What a fun time! Great food and even better company! I didn’t snap any pictures myself because I was too busy eating and drinking, but my girlfriend made sure to send me this gem. There was a belly dancer working the crowds and at one point she balanced a plastic sword on my head.
Sunday I did my usual workout at Orangetheory and then we walked to the playground to enjoy the 70 degree weather. More outdoor activities followed: chalk, riding in our big girl cars, and pulling the wagon. It’s hard to believe we had snow last week!
Later that evening we celebrated Matt’s birthday with the girls. I made this no bake peanut butter cream pie. It was my first time making the recipe, but holy moly it was amaaaazing.
Don’t be scared by the fact that it has black beans in the chocolate ganache. It was incredible and probably one of the best desserts I’ve made. Seriously, stop what you are doing and make it. Right. Now.
