Snowed in + meals

Hi everyone! I hope you had a nice weekend. We have been covered in a blanket of snow and ice over here. We were stuck at home for most of the weekend due to Mother Nature, but that didn’t stop us from having some indoor and outdoor fun.

But first, I thought I’d share a few good meals from last week.

I had lunch with a couple of colleagues at Local22. I ordered their five green salad (crisp local greens, cherry tomatoes, red onions, and radishes) and added grilled shrimp. It came with their green goddess dressing which was really good. Local friends, you should definitely check it out!


This picture looks gross, but I assure you it was very good. This was one of those kitchen sink meals. I sauteed ground turkey in olive oil and added the Sneaky Chef sauce. I served it with roasted kale and mashed sweet potatoes prepared with coconut oil and cinnamon. Omg those potatoes were like dessert.

And, this one! Turkey sausage served with zoodles and more roasted kale. (Yes, we had a lot of kale this week!) This meal was really good. I added some red sauce and that took it to the next level.

Since the gym was closed on Saturday and it was too icy to run, I woke up early and did a good workout on my own. I finished three rounds of this to make it 30 minutes and then spent around 10 minutes stretching. I was a sweaty mess at the end. If you are short on time you can complete one round (10 minutes) or two (20 minutes).

After the girls woke up we had a smoothie. This one featured bananas, mango, frozen spinach, almond milk, a scoop of sunflower butter and chia seeds. It was a hit! While they had breakfast I whipped together the almond butter blondies for tonight and cleaned up.

Then came puzzles, games, toys, crayons, and chasing daddy.

Anyone else’s house look like this most of the time? Don’t answer that.

Matt had a few clients to see so I took the girls outside for some snow fun. Check out my snow babies! These girls are so sweet.

Saturday night we hosted friends for dinner and it was really fun catching up and relaxing. Menu items included our wings, veggies, and a big salad that my girlfriend brought. I also made a spinach artichoke dip using cashews as the cheese from PaleOMG. Everyone loved it. And, of course, the dessert. Mmmm.


Sunday morning I ventured out and took an Orangetheory class, did some shopping, and then cooked a meal for our neighbor who just had her second baby. What’s better than having food delivered?
