Long weekend + this week’s top meals

Happy Monday! We are still enjoying the long weekend over here, but I wanted to provide a weekend recap and share some of our highlights.

The weekend began with cuddles on the floor and failed attempts at selfies. The girls were having fun pretending I was their baby and spent a lot of time covering me with a blanket, telling me to go to sleep, and bringing me toys. I loved it because I got to relax for a bit on the floor (with a pillow!). Until they ripped the covers off me and told me to get up. Rude.

We spent some time at the playground and then headed to the library where we read some books and grabbed tons of movies.

It seems like we can’t go anywhere without a snack so we sat and enjoyed a squeezie and GF almond butter sandwiches. We almost made it out without any meltdowns, but our trip wouldn’t be complete without one…er, two.

 

Sunday I went to an Orangetheory class where I nearly died and then hung out at the house for most of the day. I am such a homebody. Plus, it snowed after class and that made me so sad I didn’t want to leave the house. šŸ˜‰

 

We had to prepare some tax documents (definitely a downside of owning a business) and get things organized for our accountant. Then I made some cookies for a party at the girls’ school today. I decided on these chewy double-chocolate cookies, but I halved the sugar (which I usually do with recipes) and used sunflower butter instead of almond. Shh -don’t tell anyone they are GF and dairy free. They came out awesome. Make them now.

We had some pretty good eats this week so I thought I’d share some my favorite meals (PS these are all Paleo/Whole30 compliant):

Crockpot chicken thighs and zoodles: I didn’t have a recipe for this, but it was my favorite meal this week. I threw chopped carrots, parsnips, and celery into the pot with chicken thighs, broth, a couple of bay leaves and spices. I sauteed zucchini noodles in olive oil, garlic, salt and pepper and served it on the side.

Turkey chili with roasted carrots and parsnips: This was another thrown togetherĀ meal, but it came out well. I put ground turkey, chopped peppers and onions into the crockpot with a big can of diced fire roasted tomatoes, broth, and spices. I roasted carrots and parsnips and served that on the side (I had several helpings of these).

Spinach chicken salad: I could eat salads for every meal. This one was really yummy. It had chili and lime spiced chicken, avocado, tomatoes, cooked parsnips and carrots, banana peppers, figs, and walnuts all layered over spinach. I topped it with olive oil and a bit of balsamic.

 

Today’s HIGH is going to be 34 so I think we may spend most of our day indoors. The girls have been asking to go to Target so I may stop there. Locals, you were warned!
